Hello everyone, I love this site!
Thank you for all the inspiration and knowledge I gain from reading all your posts..
Does anyone know the recipie for the yummy coconut milk balls? Ive had them before from Hare Krishna friends but cant seem to find how to make them? Im nursing a broken knee pitta and feel they would be soothing!!!

i make mine without sugar. i also change the recipe a bit to suit my own tastes. i soak vanilla beans in the milk/cream/coconut water overnite before reducing it. if i want more sweetness, i'll add a bit of honey or a bit of agave nectar to it.

otherwise, i just leave 'em be. very yummy.

I tried to do that with Ladoo once....it turned out horrible. So, I used Turbinado sugar instead and less of it.

To make a finer sugar, I used a mortar and pedestal to pound the Turbinado to roll the finished product in...turned out great!

i just don't like things so sweet. so, i keep adding the dry ingredients that i have (like coconut) and reduce the milk/cream more. then i get the right consistancy without the 'sugar shock.'

though, i did mortar/pestle my turbinado sugar to make vanilla sugar for the vanilla sauce for the lingonberry 'buckle' that i made.

One more thing....when adding items such as honey, agave and other sweeteners, they need to be eaten sooner than and kept refrigerated due to possible spoilage.

In India and in the Hindu temples, they use sugar. Sugar acts as a natural preservative for items such as Kheer's, Ladoos, other types of food offerings, including these yummy milky coconut balls. Sometimes food items such as this have to sit outside in warm temperatures for long periods of time for certain poojas and offerings. Then they are later offered as prasad to devotees. I like my ingredients to be fresh and where they don't spoil...that is not good. So, if altering these traditional recipes, please do so with caution.

when i make these sweets, it's typically fresh and for immediate (same-day) consumption. when made for prasad, i make them according to the local temple's recipes when asked. typically, these are made at the temple before the event with a number of the ladies from the temple. and typically, i'll partake in that prasad, but my friend who is very sugar sensitive (a sugar addict) will not take prasad because the sugar does a number to her whole system and way of being that is major.

wow, these sound really yummy. I'm a MASSIVE fan of anything that has coconut in it. Wonder if I can make it and substitute the sugar with something else though.....

Most of the temple prasad is made by a "kitchen" priest, at least at the temple I go to. Sometimes devotees will bring in prasad and give it away in the dining hall or take it back home with them. The priest uses sugar for his Ladoos - and they offer quite a bit of it. He told me once he made over 1,000 Ladoos for the weekend visitors, that was 3 years ago....their attendance has quadrupled since then so I can't imagine how many he makes now....they are big Ladoos that are the size of a baseball..yummy,

Nice offering for Ganesha too, he loves Ladoo.

Not everyone is sensitive to sugar. Some of can and do eat sugar in moderation without upsetting our body's natural balance.

i like ladoo. the temple's kitchen priest oversees the whole of the labor--but it's a group effort if it's a prasad or community meal.

also, while i recognize that not everyone is sugar sensitive (like myself) or a sugar addict, that doesn't mean that we shouldn't make mental and physical accomodations for those who are.
